I have a Antec Earthwatts EA-500D 500W i bought a year or so ago new and have never used it. I'm thinking of building a new computer within the next couple months and was wondering if this would be sufficient for a entry level gaming computer.

That is a decent PSU. The OEM is delta and they are known for good psus. The deciding factor, on whether it will work for your system, is what the wattage requirement is for your components.

That's a pretty good PSU. This should do very good in a entry level gaming PC, as it's a Tier 2 PSU.
