I would try this set up it gives the advantage of using an intel skylake i5 while still incorporating a powerful GPU. You can always get an ssd down.

Yes but i do hope you aren't planning to OC that 8320 on the Stock cooler. You wont get very far before it hits the thermal throttle.

The AMD FX series runs hot. AMD parts in general run hot. Especially if you want to Overclock. Water cooling is generally better but there are several sub $30 dollar air coolers that work very well. If you do want to opt for water-cooling do some research on them and maybe watch a few install videos on YouTube to get an idea what they look like and how they work.

I'm well aware of the bait n switches from years ago on their low end models.

Don't buy bait-n-switch SSD's. Obviously.

The 2111 and 4111 are not effected by the bait n switch, they are great quality SSD's with good performance.
