Help another WoW guy, small budget

Budget less than $600 I'm in SC here in the USA, I do not eBay and prefer new parts. I am not new to building, just outdated I play WoW, minecraft, and watch Netflix YouTube etc. I have done a parts list but would like to see ideas y'all have as I am not up to date on newer cpu, GPU etc. SSD I already have. I do not care about aesthetics or color. I am function over form. I hope I've answered everything needed?

Thank you, I appreciate the list, one thing I'm curious on I keep seeing people suggest the i3 over quad and, or higher clocked processors, what makes this processor better for gaming as a dual core than some of the less expensive processors that look better numbers wise? I'm far far out the loop on new tech, last gaming pc I built was in 2007
