What do you believe this build will be able to accomplish? FPS/Quality wise.

Is there room for upgrading, or am I locking myself in with this mobo + CPU?

that depends on the games you are playing CS:GO and similar will run very well at high FPS but it will run AAA games as well though not as high and settings may have to be reduced over time but that is the same for all builds as for upgrading the new intel CPU's when released more ram if needed and of course a new GPU in a couple of years time.

You'll be OK for upgrades. There's still a generation (or two?) of chips left to come out for 1151. Kaby Lake will for certain be compatible with 100-series chipsets. You have two slots left for memory, and most anything else you'd want to add should plug right in. Unless you're desperate to OC, your list is fine. Expect to get grief for that PSU, though.
