This is my first time building a pc. I am mainly using it for Programming and watching videos really. But seeing as lots of GPU's are on sale at the moment as well as other parts. I wanted everyone's on how I would be able to optimize it to be able to handle gaming. The type of games I wanted to run were Witcher 3, Fallout 4, Skyrim at 1080p@60fps( My monitor is 1080p max). Also other parts suggestions are welcome in order to help me achieve but for now the build is as follows; https://pcpartpicker.com/list/kw24BP

The monitor is an HP 27" es 1080p.

Any input is appreciated please and thanks!

There are 1060s out there for cheaper, but this one is still good. I don't think you plan to overclock, but if you do, it wouldn't hurt to get a better cooler.
