This is what I have so far and now I'm just looking for a good power supply to fit in with the build. I don't really want to go as far as getting 1000W since I don't think its needed so I came up with these 2.

Or Corsair RMx 750W https://pcpartpicker.com/product/9q38TW/corsair-power-supply-cp9020092na 100$ for the moment and as good as the G2 series from evga. So Great deal i would say

760W or 850W is a huge overkill - you could fit two more GTX1080 on that and still have room. Why not pick a high end 550W PSU?
