I am building a system with AMD Ryzen 7 1700 with Zotac GTX 1080mini. I am not sure this power supplies good for 8 cores. Any recommendations welcome.

It's a decent unit, but a bit old. Check the newer Focus Plus Gold series for a couple bucks more.

That PSU is old and isn't recommended anymore. A Corsair CXM is a far better unit. Consider a G2 SuperNOVA if you want a high end unit.
