Easily. You could probably go with a 1050 Ti for cheaper and still get satisfying results.

Picked a budget motherboard that still has 4 RAM slots, allowing you to take advantage of dual-channel RAM now, and still have a simplified upgrade path for more RAM in the future.
Budget 2x4GB kit for RAM. Benefits from higher frequency RAM are less significant for Intel CPUs, so 2400MHz should suffice. 8GB total RAM should be fine, so long as you don't have many programs running in the background as you play your games.
Small SSD to improve boot times and load times for programs installed on it. (You can remove this without hindering actual in-game performance.)
The 3GB 1060 is a decent lower mid-tier choice, suitable for 1080p at 60-75 fps. Fortnite and Rocket League should be fine, though more intense games may require you to lower the settings. (Could upgrade to the 6GB 1060 and still remain around your budget if you removed the SSD, but I'll leave that up to you and how much you want the benefits of an SSD.)
Case aesthetics are a largely matter of personal preference, if that's a problem for you. In terms of other requirements, do you need any front ports on the case, do you have any size requirements, etc.?
