So, I still have a 1500X and a 1600 and have been considering selling them both (already selling the 1500X) and getting the 2600. I am using a B350 MSI Bazooka motherboard (I know, not the best for 6-cores and above - but it's doing surprisingly well). I don't know if there would be much benefit to upping to the 2600 (I'm on a 140mm AIO right now) or if I should just stick with the 1600.Any recommendations?

It really depends on what you're doing, but for just gaming, the 1600/2600 are more than enough, and the 1500x is satisfactory. I have a 1500x myself, and even at stock clocks it never goes above 90% utilization for my 144hz gaming. I'm planning on upgrading to Zen 2 R7 (Not +), because it should bring even higher clockspeeds, lower power consumption, and potentially more cores. I feel like going from Gen 1-2 isn't worth the upgrade, it's only a 10% or so bump.

I'm selling the 1500X since my wife streams as well (the reason I went from 7600K to 1200 to 1500X to 1600, lol).

Yeah, this is the crux of my dilemma.

This. I have a 1600 and plan on upgrading next year because year to year upgrades are usually not that significant of a jump.

Also, I felt obligated to reply to this with "Let's go Lightning."

No. The 2600 is able to clock higher but it's not an big boost in terms of performance.

I would, but I've been very impressed with the OC results I get with it as is. I don't see much headroom opening up on the motherboard side of things, although I could be wrong especially if pushing it even higher with a 2600.

IDK, a lot to think about. The question is: waste ~$30-40 just cuz, or don't. lol.

So I had the Bazooka with my 1600. It was not a good time. I had ****** audio issues and a few other annoyances.

I returned it and got an ASUS Tuf Gaming Plus B350m instead. I was even able to hit 4.1GHz on my 1600! Albeit at too high voltage, so I am now on 3.9GHz. However I couldn't even get past 3.8 on the MSI.

Edit: I'm also not upgrading until Ryzen 2 at least.

You want to buy a 1500X in the mean time? lol. Or, I could probably sell you the 1600 if I do decide to upgrade. ;)
