Quit Investment Banking - Now I can Game Again! (Canadian mAtX Build)

Recently finished up 2 years in finance and I'm very much looking forward to all of my new-found free time. Excited to put together my first build in over a decade. This subreddit is a wealth of knowledge and your feedback would be greatly appreciated.

Budget is ~$1K CAD. But willing to pay more if performance warrants it. Would like to run modern FPS games at consistent 60 FPS at 1080P. (Is 1440p worth it?) mATX form factor for ease of moving.

cpu: get a "k" model for overclocking. Otherwise the cpu will be locked and impossible to overclock.

ram: get 2x4gb sticks instead of 1x8gb

Would overclocking really be worth the extra investment in a CPU cooler/motherboard?
