Depending on how much you plan to OC, you may want a different (higher-end) CPU cooler. I'd suggest the Noctua D14/D15 or Phanteks PH-TC14PE series (comes in various colors) for air cooling (check ram clearances if you pick one of them, though the set you picked looks good) or Corsair H100i if you want a AIO water cooler.

You should be able to swap the HDD out for the "FZ" version ( http://pcpartpicker.com/part/western-digital-internal-hard-drive-wd1003fzex ). The FZ version is newer, slightly cheaper and has better read/write speeds.

I don't know your plans, but that 750w PSU is most likely too much for your current setup. If you plan on getting another graphics card or something, then it should be ok, but if you aren't, you could probably go with a lower wattage/price while keeping the Full Modular connections.

I'll be OCing, hence why the PSY but I've changed some of the build actually. If I go with the new fans, how much should I expect to increase in OC?

Note, I also changed the keyboard and would like a suggestion for the mouse to match the branding of the keyboard if you could haha.

I don't think you'll be using that ~300 watts headroom. Just a quick calc based off of another build, but a ~4.6 GHz OC (Vcore = 1.25) seems to only use an additional ~30w. For a mouse, I use a Corsair M65 Vengeance It's about the same price, and it's green (I like green) but comes in other colors/LED options if you don't like green. I like it, though like any mouse/keyboard, it takes some time to get used to it.
