for most games you will be well beyond 60fps
I think that you should go with the i7 build without a graphics card. From my research, I found that most entry level video editors don't include a gpu in their builds.. its mostly CPU processing power. As for the CPU, that Xeon is labeled as a server CPU... I can't really say much about it though as I have never used on. I DO know the i7 has hyper threading and for applications like video editing, this can help a lot.
I would try not to go Crossfire right away, but thats just something "I" have always said. for about $540 you could get a 290x and save a bit of money.

as far as cables, this case doesnt not have any real cable management options to make it look super tidy so what you have right now is pretty good. If you took another picture that shows the cable management a little better I could try to suggest something.

Yeah I see what you mean with the case. Its one of the more important decisions to make when building a high end rig. Oh well.. Nice build. also I would have gone for a 770 for the same price though.
I wouldn't have gone with dual GPU's right off the bat, however It does seem to me that a lot of games are starting to more popularly support SLI so you will probably be fine. Good job on cable management and a very nice build.
hmm.. I would have thought your temps would be lower with 480mm of rad. SWEET build none the less
